Nutritional yeast is the special ingredient in our paleo “cheese sauce”. It’s an inactive form of yeast, packed with energy-boosting vitamin B-12 and antibacterial properties. This S. cerevisiae yeast strain lends itself to vegan cheese and nut cheese recipes. Try sprinkling nutritional yeast on hot buttered popcorn or mix it into vinaigrettes for a surprising umami blast of flavor and an extra shot of B-12 in your diet.

Skin-on chicken thigh is marinated in homemade sweet chili sauce. Served over coconut cauliflower rice and steamed broccoli. Our beautifully balanced sweet chili sauce starts with local garlic, blanched to remove the pungent oils that give garlic its distinctive aroma. The result is a sweet and mellow pearly white garlic clove.  Three varieties of red peppers are poached in honey and apple cider vinegar until tender, then blended with the garlic. The mixture is cooked again, melding flavors and creating a sauce free of corn syrup and fillers.

The pasture-raised ground lamb burger is seasoned with mint, oregano, and garlic; topped with an apple cranberry catsup. Creating seasonal catsups is a wonderful way to add local flavors to a condiment staple. This season's homemade catsup features local apples, cranberries, Amish paste tomatoes, maple syrup and apple cider vinegar. The ingredients are simmered for hours, creating a tart and sweet fall sauce. Served over greens and roast butternut squash.

Open ocean raised salmon is seasoned with classic “old bay” seasoning over sauteed local greens and a classic paleo remoulade with capers and lemon. We use sustainable raised open ocean farmed salmon. Not all farmed raised salmon is created equal. This salmon is fed krill, plankton and other naturally occurring proteins in their diet while swimming in vast open ocean cages allowing for the development of muscles and nutrient richness.
