Apple Cider Braised Pork
Apple cider is a fall and winter-time favorite for both drinking and cooking. Apple cider is the cloudy liquid left after pressing the ground whole apples. (Clear apple juice has been filtered and heat processed for a longer shelf life.) Enjoy cider cold or mulled with warm spices like allspice, cinnamon, ginger and cloves. Reducing apple cider to a sticky syrup produces an intense flavor and is delicious served with meat or winter squash or drizzled over vanilla ice cream. In this dish, the pasture-raised pork is marinated and slow roasted with spiced apple cider syrup. Celery root/potato mash and greens complete this classic pairing.
