At Azuluna Foods, we take our stocks and sauces seriously. All stocks and sauces are made in-house in small batches. Bones and aromatics are roasted and simmered for hours, coaxing out the collagen and essential amino acids stored in the bones. The stock is then strained and reduced by 75%, creating glace, a dark brown syrupy essence of chicken. When chilled, the glace is solid and can bounce like a superball! Jam-packed with collagen, aminos and flavor, this is the base of the sauce for our beef stew. Grass-fed beef is simmered with root vegetables and served over mashed potatoes with steamed broccoli.
