Chicken Cacciatore with Spaghetti Squash and Broccoli
Cacciatore means "hunter" in Italian. In cuisine, alla cacciatora refers to a meal prepared "hunter-style". Originating in the Renaissance period, between the 14th and 16th centuries, this medieval dish typically consisted of rabbit or small woodland birds and always contained peppers, onions, mushrooms, garlic, fresh herbs and tomatoes with some type of wine or vinegar. In our version of the classic comfort food, pasture-raised chicken is slow braised in traditional Cacciatore style, and served over roasted spaghetti squash with steamed broccoli.
