Capers are a wonderful way to add a lot of flavor in a little package. The caper bush, also called Flinders rose, is native to Mediterranean climates and best known for the edible flower buds (capers), used as a seasoning, and the fruit (caperberries), of which are usually consumed pickled or brined.

Caperberries are a delicious salty snack on their own or chopped and added to Greek yogurt or skyr for a creamy salty dip. The nonpareil capers used in this dish are folded into a light lemon velouté using pasture-raised bone broth and fresh thyme. This piccata sauce is served over pasture-raised roast chicken, accompanied by whipped coconut sweet potatoes and greens.
