Green Chili Chicken, zucchini, plantains

Tomatillos are a member of the gooseberry family, when young the fruit is tart and sour and excellent for salsas. As the tomatillo matures it gets sweeter lending itself to savory green chilli. Tomatillos are special because it is one of the few fruits that contain with anolides which have powerful anti-inflammatory properties. Pasture-raised chicken is gently simmered in a green tomatillo sauce with vegetables and stewed plantains.
