Lemon Lamb Tagine
Pasture-raised lamb is slow braised with a classic Moroccan spice blend, including cardamom and allspice. This dish is paired with butternut squash “coos-coos” and roasted vegetables. The lamb raised at Woodstock Sustainable Farms is special. Their stock leisurely grazes on rotated open pasture and are fed a unique sheep mash. Locally produced and small-batch blended, this feed was developed specifically for this breed. The meat has a gentle nutty and herbaceous aroma. Very different from the pungent lamb and sheep of years past.
