Local maple syrup is mixed with liquid amino acids to create a sweet and salty glaze in which open ocean raised salmon is marinated and slow-roasted. The maple tree is one of the most prevalent in the Northern Hemisphere and is known for its foliage, its pollinator qualities, and its sweet sap.


It takes 30 to 40 years for a maple tree to produce sap and 40 to 50 gallons of sap to make 1 gallon of maple syrup. Native Americans would boil the sap with hot rocks from a fire, giving it a slightly smoky, sweet flavor. The salmon is served over coconut whipped sweet potatoes and braised red cabbage.
