Mint Lamb Meatballs zucchini noodles, roasted tomato, wilted greens
Rich in vitamin A and manganese, mint is the perennial herb of Spring in New England. We pick spearmint and Swiss mint varieties, then dry and grind it, and blend it into our local lamb meatballs. The meatballs are simmered in our tomato sauce, which is slow-cooked to express the natural lycopene, a cancer-fighting phytochemical. Served over zucchini noodles with wilted greens.
