We love seeing how the sausage is made! Ours is produced by a small, family-run farm in New York State, using a recipe that has been passed down through generations of German charcuterie. First, the cuts are carefully selected to create the perfect meat-to-fat ratio. Sweet fennel, black peppercorn, thyme and granulated garlic perfectly compliment the rich lamb flavor.
