Thai Chicken & Cassava Coconut Crepe, wilted vegetable slaw
Pasture-raised chicken is tossed with cilantro, lime, tamarind and wrapped in a homemade cassava crepe. Cassava is a tropical tuber and is ground into a fine gluten-free flour. The flour is blended with local pasture-raised eggs, coconut milk and curry spice. The batter is cooked into a paper thin pancake which delicately wraps the savory filling. Served over wilted napa cabbage slaw.
